Vegan Ice Cream Smoothie Bowl

I've started making vegan ice cream for breakfast over the last few days because the weather in Ireland has been surprisingly warm and sunny, and of course we have to take full advantage of that situation! So for breakfast I've been having my vegan ice cream, granola on top and then your fruit of choice on top! So for the worlds easiest ice cream recipe you will need;


  • 2 x Frozen Bananas
  • 2 Cups of Frozen Berries
  • Almond Milk
So all you have to do is blend everything together! I just put all the ingredients in my nutribullet and add some almond milk, almond milk makes the ice cream creamier than water will. I haven't given an exact measurement for the the almond milk because it seems to vary every time, you'll know once you start blending if you need to add a little more. You can use non-frozen berries but the ice cream wont have as close a texture to actual ice cream as this one does. I really hope you enjoyed this! You could definitely make this a desert by changing your ingredients and toppings, or even layering it to make a sundae!

Vegetarian/Vegan Pad Thai

Today's recipe is a vegetarian/vegan Pad Thai. Pad Thai is one of the most popular Thai dishes and is available in almost every Asian restaurant. It may look intimidating but is actually quiet easy to make. So I'm going to write the recipe below, one or two changes may be needed to ensure the dish is Vegan.

Ingredients:
  • 8oz of rice noodles
  • 1 cup of roasted peanuts
  • Loads of  mixed stir fry veg (beansprouts, cabbage etc.)
  • 1/4 cup of lime juice
  • 2 1/2 tbsp soy sauce 
  • 2 1/2 tbsp brown sugar
  • 1 tbsp sweet chili sauce
  • 1 fresh chili no seeds
  • 4 spring onions
  • 2 x eggs
  • 2 cloves of garlic
  • 1 lime to slice
Method:
  • Follow the instructions on your rice noodles. Most have to be left sitting in boiling water for about 15 mins, some are straight to wok. 
  • Mix the soy sauce, lime juice, brown sugar & sweet chili sauce in a bowl.
  • Cut your spring onions lengthways and then in half. Using some spray oil fry your garlic, chili and spring onions in a pan.
  • Once they have softened add in the mixed stir fry veg and cook for about 10 minutes.
  • Chop up your peanuts and add them into the pan, fry for another 5-10 minutes.
  • Skip this step if you are vegan but add in the 2 eggs, mix together with your vegetables and cook for 5 minutes.
  • Add in the rice noodles and the dressing you made earlier with the lime, soy etc.
  • Toss everything together and cook until everything is warmed through.
  • Serve with a wedge lime.
  • Enjoy!

Green Eats.. What I Ate Today!

So as my first food post I'm going to do a What I Ate Today! I love these types of posts and Youtube videos, I swear I binge on those videos! So here it goes, What I Ate Today (well yesterday) Hahaha..
Enjoy and I hope you try some of these meals out.

For Breakfast:

 I had a green smoothie bowl. It had avacado, banana, apple, spinach and water in the base. On top I put 0% fat Fage Greek Yoghurt and my homemade berry coulis, it is s easy to make! All I did was put frozen mixed berries with some water and 1 tsp of maple syrup in a pot and allowed it to simmer and soften. I then sprinkled some of my Granola on top. The granola has oats, maple syrup, cinnamon and chopped nuts. I'll post the full recipe at a later date. So this breakfast is ideal for vegetarians and if you leave out the Greek Yoghurt it is ideal for Vegans too, Enjoy with a mug of hot lemon water!




 For Lunch:

I had vegetarian/vegan/gluten free/ dairy free pancakes for lunch! They are the most amazing thing on this planet. All they contain is gluten free oats, a banana, vanilla essence and almond milk. I cooked them in a little organic coconut oil and they browned beautifully. I added the leftover berry coulis from breakfast on top.



For Dinner:

The weather was beautiful so we had a bbq. I made corn that was marinated in a little butter and chopped chili (vegans can use olive oil). I then made a salsa and added it on top of some toasted ciabatta roll and I added some feta on top. Then on the side there was a spinach salad, it was simply just spinach, toasted pine nuts, balsamic vinegar and some feta crumbled on top. Of course if you are vegan you can just leave out the feta cheese.


 For Snacks:

I didn't take pictures of my snacks, ooops. I just had fruit if I was peckish and I drank 2 litres of water (hydration is KEY).

Hello Everybody!

My name is Lauren, I'm 21 and I live in Ireland. I'm a food fanatic, an animal and life LOVER and a newbie vegetarian. I'm writing this blog to hopefully inspire others, as others have inspired me!
